SafLager W-34/70 500 g – dry lager yeast for breweries

SafLager W-34/70 from Fermentis is a dry lager yeast of the well-known strain from Weihenstephan in Germany. Breweries all over the world use it for lagers and pilsners. It gives clean flavours, a good balance of floral and fruity aromas and a highly drinkable beer. The 500 g pack is intended for breweries and others brewing larger volumes.

How to use W-34/70

  • Direct pitch: Sprinkle the yeast evenly over the surface of the wort at fermentation temperature so that it does not clump.
  • Rehydrated: Stir the yeast into at least ten times its weight of sterile water or boiled and hopped wort at 15–25 °C. Leave for 15–30 minutes before pitching.

How much yeast do I need?

Fermentis recommends 80–120 g per hectolitre. A 500 g pack is therefore enough for about 4–6 hl of wort, depending on the dosage.

What temperature should W-34/70 ferment at?

The ideal fermentation temperature is 12–18 °C. Lagers benefit from a diacetyl rest towards the end of fermentation and then time cold.

Does the yeast need to be rehydrated?

No. Fermentis states that W-34/70 can be sprinkled directly onto the wort at fermentation temperature, or rehydrated first in sterile water or boiled, hopped wort at 15–25 °C.

How long does the yeast keep?

Shelf life is 36 months from the production date. Store the yeast below 24 °C for up to 6 months and below 15 °C for longer storage.

Is W-34/70 available in smaller packs?

Yes, W-34/70 is also sold in 11.5 g for homebrewers and in 100 g.
