Technical data
- yeast: Saccharomyces pastorianus (bottom-fermenting lager yeast)
- ideal fermentation temperature: 12–18 °C
- attenuation: 80–84%
- alcohol tolerance: 9–11%
- flocculation: high
- ester production: low
- pitch rate: 80–120 g per 100 litres at 12–18 °C
How to use
You can sprinkle the yeast directly onto the wort or rehydrate it first. When pitching directly, sprinkle the yeast gradually over the whole surface to avoid clumps. To rehydrate, sprinkle the yeast into at least ten times its weight of sterile water or boiled and hopped wort at 25–29 °C. Leave for 15–30 minutes, stir gently and add to the fermenter.
If you ferment below 12 °C, Fermentis recommends increasing the pitch rate, up to 200–300 g per 100 litres at 9 °C.
Fermenting at higher temperatures
Studies by Fermentis show that W-34/70 can be fermented like an ale at 20 °C without a noticeable difference in the result. See the presentation below, from slide 34 onwards.
