Lemon purée 1 kg from Fruits Rouges & Co – fruit purée for beer, cider and mead
The lemon purée from Fruits Rouges & Co is made from ripe lemons that are peeled, crushed, sieved and pasteurised. The purée can be poured straight into the fermenter, without you having to boil or pasteurise it yourself. It adds fresh lemon flavour and acidity to fruit beers, sour beers, hard seltzer, cider and mead.
All fruit must meet Fruits Rouges & Co's requirements for Brix value, size, colour and pesticide residues, among other things. The finished product is checked at the end of production and taste tested, so that flavour and colour are like fresh fruit.

Frequently asked questions about lemon purée
When do I add the fruit purée?
Usually after primary fermentation, after about a week. Then let the beer ferment for at least another week, so the yeast can consume the sugar from the fruit.
How much fruit purée do I need?
A rough guide is 1–4 kg per approx. 25 litres, depending on how pronounced you want the fruit flavour. Lemon is acidic and low in sugar, so start at the lower end of the range and adjust to taste.
Does the purée need to be pasteurised before use?
No. The purée is already pasteurised and can be poured straight into the fermenter.
How do I store the purée?
Unopened packs can be kept at room temperature, but preferably at 15 °C or lower. Once opened, it keeps for 21 days in the fridge.
