WLP028 Edinburgh Scottish Ale Yeast – PurePitch Next Generation 70 ml

WLP028 Edinburgh Scottish Ale from White Labs gives underlying esters of pear and melon, which work well with both hop and malt flavours. The strain is versatile: at the lower end of the temperature range it is neutral, and at the upper end it produces more esters. Medium to high alcohol tolerance makes it well suited to strong Scotch ale and barleywine.

PurePitch Next Generation contains twice as much yeast in a convenient 70 ml pack, to pitch 7.5 million cells/ml every time. The pack is recommended for 20 litres of standard ale with OG below 1.074 and a temperature above 16 °C, without a starter. Just twist off the top and pitch the yeast.

What temperature should WLP028 ferment at?

The ideal fermentation temperature is 18–21 °C. Ferment at the lower end for a neutral beer, and at the upper end if you want more esters.

Do I need a yeast starter?

One pack is intended for 20 litres of standard ale with OG below 1.074 and a temperature above 16 °C, without a starter. For strong Scotch ale or barleywine above this, you need more yeast, for example two packs or a starter.

How dry will the beer be?

Attenuation is 70–75 %. That gives a beer with some residual sweetness and body, which suits malt-forward styles.

Which beer styles is WLP028 suited to?

Above all Scotch ale, barleywine, old ale and dark beers such as porter and stout, but also bitter, brown ale and red ale.
