WLP300 Hefeweizen Ale Yeast - PurePitch Next Generation
This popular German strain is used in the production of traditional, authentic hefeweizens. It produces high levels of isoamyl acetate, giving the resulting banana character. With balanced phenolic production, this strain produces clove notes, but with an emphasis on banana. Low flocculation leaves the desired hazy appearance, appropriate for the German wheat beer style. Pitching rate and temperature will dramatically affect the flavor and aroma of this strain. Traditional brewing techniques recommend underpitching to produce more classic characteristics of this style.
