Frequently asked questions about WLP775 English Cider Yeast
What temperature should WLP775 ferment at?
White Labs specifies 20–24 °C. Keep the temperature as steady as possible throughout fermentation.
Will the cider be dry or sweet?
WLP775 ferments dry and keeps the apple flavour. For a sweeter cider, use a non-fermentable sweetener or sweeten in the glass. Fermentable sugar in the bottle can build up too much pressure.
Do I need a yeast starter?
No, not for a normal batch. One PurePitch Next Generation pack is designed for 20 litres with an OG below 1.074 at above 16 °C.
How should I store the yeast?
Liquid yeast should be kept in the fridge until use. Take it out a little while before you pitch it.
