Frequently asked questions about peach purée
When do I add the fruit purée?
Usually after primary fermentation, after about a week. Then let the beer ferment for at least another week, so the yeast can consume the sugar from the fruit.
How much fruit purée do I need?
A rough guide is 1–4 kg per approx. 25 litres, depending on how pronounced you want the fruit flavour. For sour beers we recommend at least 2–3 kg per 25 litres.
Does the purée need to be pasteurised before use?
No. The purée is already pasteurised and can be poured straight into the fermenter.
How do I store the purée?
Unopened packs can be kept at room temperature, but preferably at 15 °C or lower.
