Festival Bräu Märzen Lager all-grain beer kit – a traditional Oktoberfest beer
Festival Bräu is an all-grain beer kit for a traditional Märzen, often called Oktoberfestbier or Festbier. The beer has good sweetness, body and malt character, with a crisp bitterness. The kit is for all-grain brewers who want to make a proper festival lager at home.
Märzen is the original beer served at Oktoberfest in Munich. As the name suggests, it was traditionally brewed in March. A 16th-century law banned brewing during the warm summer months because of the fire risk, so the beer was brewed in spring and stored until autumn.

For quality and shelf-life reasons, the malt is supplied unmilled. If you don't already have a grain mill, we recommend getting one so you have freshly milled malt on brew day.

What is a Märzen?
A Märzen is a German lager with pronounced malt character, good body and moderate bitterness. It is the traditional beer style of Oktoberfest in Munich.
How should Festival Bräu be fermented?
The recipe calls for 10 days at 12 °C, then 2 days at 15 °C and finally 4 days at 4 °C. Raising the temperature towards the end gives the yeast time to clean up off-flavours before the beer is chilled.
Why are there three packs of yeast?
Lager yeast needs almost twice as many cells as ale yeast, and the beer has an OG of 1.058. Three packs of LalBrew Diamond Lager provide enough yeast for the batch.
Do I need temperature control?
Yes. Fermentation takes place at 12 °C, and at the end the beer goes down to 4 °C. A fridge or fermentation chamber with a temperature controller makes this easy.
Why is the malt unmilled?
Once malt is milled, it starts to oxidise and lose flavour and aroma. Brewshop therefore stores the malt unmilled and only mills it when you choose milled malt at checkout. With your own grain mill, you can mill the malt just before brewing.
