SafBrew DA-16 25 g – yeast and enzymes for dry beers and Brut IPA
SafBrew DA-16 from Fermentis is a blend of yeast and enzymes (glucoamylase) for dry and flavourful beers, especially fruity and hoppy styles such as Brut IPA. The glucoamylase breaks down dextrins that ordinary yeast cannot ferment, so attenuation is very high and the beer very dry.
DA-16 is also recommended for very high-gravity worts and tolerates alcohol levels of up to 16 % ABV.

How much DA-16 do I need?
Fermentis recommends 100–160 g per 100 litres. One 25 g pack is therefore enough for about 16–25 litres of wort.

Why does the beer turn out so dry?
The glucoamylase enzyme breaks down dextrins into sugars the yeast can ferment. Attenuation reaches 98–102 %, leaving very little residual sweetness.
What should I check before bottling?
Make sure the FG is stable for two to three days in a row before bottling or kegging. Bottling too early can let fermentation continue and build too much pressure in the bottles.
