SafLager S-189 11.5 g – clean and neutral Swiss lager yeast
SafLager S-189 from Fermentis is a dry lager yeast originating from the Hürlimann brewery in Switzerland. Its profile lets you brew beers with a fairly neutral taste and high drinkability, putting malt and hops in focus. Depending on the conditions, it can give noticeable herbal and floral notes in pilsners.

How to use the yeast
Fermentis states that the yeast can be sprinkled directly onto the wort at or above fermentation temperature. You can also rehydrate it in at least ten times its weight of sterile water or boiled and hopped wort at 15–25 °C, leave it for 15–30 minutes, stir gently and pitch.

How many packs do I need for 20 litres?
Fermentis recommends 80–120 g per 100 litres. For 20–25 litres of lager that means 16–30 g, i.e. two 11.5 g packs. Lager yeast needs almost twice as many cells as ale yeast.
What temperature should S-189 ferment at?
The ideal fermentation temperature is 12–18 °C.
