Talus Cryo Hops 25g

The name Cryo Hops® comes from the Greek word “kryos”, meaning frost. It is a cryogenic hop processing technology that separates whole hop cones into two components: concentrated lupulin and bract. Each component is preserved at low temperatures in a nitrogen-rich environment throughout the process, from separation to pelleting.

Cryo Hops pellets are the concentrated lupulin of the hop, containing resins and aromatic oils. They give intense hop flavour and aroma, so you can dose large amounts of alpha acids and oils without astringent flavours or vegetative material. Cryo Hops can be used anywhere regular pellets are used, but are especially well suited to the whirlpool/hop stand and dry hopping.

Talus is an American aroma hop from the Hop Breeding Company, released in 2020. It is a daughter of Sabro. The aroma is dominated by pink grapefruit and tropical fruit, with freshness from lime and redcurrant, and touches of mango, cedar, rose, herbs and pine.

How to use Cryo Hops

As a starting point when creating or adjusting a recipe, use 50% of the weight of regular pellets. Cryo Hops are especially suited to hop-driven beers such as IPA and NEIPA, and work best late in the boil and for dry hopping. BarthHaas notes that the roughly 1:1 ratio of alpha to beta acids also gives usable bitterness if Talus is added earlier in the boil.

How much Cryo Hops should I use instead of regular pellets?

Start with half the weight. Where a recipe calls for 100 g of regular pellets, use about 50 g of Cryo Hops. Then adjust to taste.

Why is the alpha acid higher than in regular pellets?

How do I store Cryo Hops?

Store Cryo Hops cold, dark and airtight. Yakima Chief Hops recommends storage near freezing, preferably at −1 to 2 °C. Under these conditions, unopened, nitrogen-flushed and vacuum-sealed Cryo Hops remain stable for three years.
