WLP051 California V Ale Yeast – PurePitch Next Generation 70 ml

WLP051 from White Labs has more in common with an English strain than with WLP001 California Ale Yeast. It is a big ester producer, showing notes of cherry and apple that complement pale ale, blonde and brown ale. The yeast typically leaves some lager-like sulfur compounds in the finished beer. Recent sequencing shows that the strain belongs to Saccharomyces pastorianus, the same hybrid species as most lager strains, but it has been used for ales for decades and was previously classified as Saccharomyces cerevisiae.

PurePitch Next Generation contains twice as much yeast in a convenient 70 ml pack, so you consistently pitch 7.5 million cells/ml. The pack is recommended for 20 litres of standard ale (OG below 1.074 and temperature above 16 °C) and gives an easy fermentation without a starter. Just twist off the top and pitch the yeast.

No, not for 20 litres of standard ale with an OG below 1.074. For stronger beers or larger batches you need more packs or a yeast starter.

Why does my beer smell slightly of sulfur?

WLP051 typically leaves some lager-like sulfur. This is normal for the strain.
