WLP565 Belgian Saison I Ale Yeast – PurePitch Next Generation 70 ml

WLP565 is a classic saison yeast from the Wallonia region of Belgium, from White Labs. The strain produces a classic saison with flavours and aromas described as earthy, peppery and spicy. With an attenuation of 65–75%, some malt flavour remains in the beer. For best results, let the temperature rise freely so the yeast attenuates fully and produces the subtle, traditional aromas. For high-gravity beers it is recommended to dry the beer out with another yeast, such as WLP001, added when you are a little over halfway through fermentation.

PurePitch Next Generation

PurePitch Next Generation contains twice as much yeast in a convenient 70 ml pack, so that you pitch 7.5 million cells/ml every time. The pack is recommended for 20 litres of standard ale (OG below 1.074 and temperature above 16 °C) and gives an easy fermentation without a starter. Just twist off the top and pitch the yeast.

What temperature should WLP565 ferment at?

The ideal fermentation temperature is 20–30 °C. Let the temperature rise freely during fermentation so the yeast attenuates fully.

How do I get a dry saison with a high OG?

Add another yeast, for example WLP001, when you are a little over halfway through fermentation. This dries the beer out.

Do I need a yeast starter?

PurePitch Next Generation is designed to be pitched without a starter in 20 litres of standard ale with an OG below 1.074.
