Corking wine and sparkling wine: Wine bottle corkers in bench, floor and Doc Revolution models, natural corks 24 × 44 mm, synthetic wine corks 23 × 38 mm, tapered corks and champagne corks 30.5 × 48 mm. The wire twisters fit the wire cage onto the champagne cork.
Bottling beer: The VIK Capper is a hand capper with bells for both 26 and 29 mm caps, with a magnet that holds the cap in place. The bottle filler with removable spring is 27 cm long and fits a tap or tubing.
Fermentation: Compact Mini (up to 30 litres) and Compact Medium (up to 60 litres) are two-piece airlocks that stand only about 4 cm tall. Also a 5-litre glass demijohn, a 16-litre fermenting bucket and hydrometer test jars of 100, 250 and 500 ml.
Cleaning and drying: Easy Drainer is a bottle drainer with a rack for up to 25 beer bottles. It can be expanded and stacked up to 7 levels. Turbo Washer and Easy Washer are used to clean bottles.
Cheesemaking: A complete cheesemaking kit, kits for mozzarella, brie, camembert and aged cheeses, cultures for 10 litres of milk, calf rennet and vegetable rennet.
Vegetable fermentation: A 1.7-litre fermentation jar with press and airlock, a complete kit with pH strips, and preserving jars of 580 ml, 1.7 litres and 3.1 litres.
How to choose a corker
For beer bottles with crown caps you use a capper such as the VIK Capper. For wine bottles with natural or synthetic corks you need a corker that compresses the cork before it goes into the bottle. The Enolandia bench corker takes corks up to 25 mm in diameter and bottles of 23–33 cm. For sparkling wine you need champagne corks, wire cages and a wire twister, which also presses the cork down into the classic mushroom shape.
Frequently asked questions about Enolandia
How much rennet do I use?
For calf rennet at strength 1:10000, the average dose is 3–4 ml per 10 litres of milk at about 36 °C. If the curd is not firm after about 30 minutes, add a little more and wait another 20 minutes.
Can I make cheese from ordinary semi-skimmed milk?
Yes. The Enolandia cheesemaking kits work with ordinary low-fat milk. The mozzarella kit includes everything except the milk, while the complete kit needs milk and a culture for the cheese you want to make.
What do I need to ferment vegetables?
A jar with an airlock and a press that keeps the vegetables below the brine. The Enolandia kit also includes a thermometer and pH strips. For sauerkraut, mix 1 kg of shredded white cabbage with 20 g of salt and leave it to ferment for 1–2 weeks at room temperature.
What size fermenters do the Compact airlocks fit?
Compact Mini suits fermenters up to 30 litres and Compact Medium up to 60 litres. Tubing with a 12 mm inner diameter fits the centre tube and can be used as a blow-off during vigorous fermentation.
