Finding the right additive for each step of the brew
- Brewing liquor: Calcium sulphate (gypsum), calcium chloride, magnesium sulphate and acids adjust minerals and pH before mashing. 25 kg calcium sulphate is the best-selling bulk brewing salt.
- Mashing: Enzymes such as glucanase and AMG, and 17 kg rice hulls for better run-off.
- The boil: Kettle finings such as Protafloc tablets go in for the last 10 minutes. Sugars, candi syrup and spices such as bitter orange peel add alcohol, colour and flavour.
- Fermentation: ALDC counters diacetyl and hop creep, and antifoams keep foam down in the tank.
- After fermentation: Super F and gelatine clear the beer. Lactose adds body and sweetness because it does not ferment, and 25 kg dextrose is used for fermentation and carbonation.
